30 blinis - Preparation: 30 min - Cooking: 3 minutes per blini
Ingredients
300 g of flour
3 eggs
0.5 l of milk
15 g of baker's yeast
1 pinch of salt
Preparation
Preparing the batter:
Dissolve the yeast in 3 tablespoons of lukewarm milk.
Put the flour in a mixing bowl, then add the salt, egg yolks, and yeast. Mix well.
Gradually incorporate the milk. Cover the dough with a kitchen towel and let it rise for 3 hours.
Beat the egg whites until stiff peaks form, then gradually fold them into the batter.
Cooking and serving:
Form small discs by pouring the batter with a ladle onto the crepe maker set between 200 and 220°C (392-428°F).
Cook the blinis for 1 to 2 minutes on each side. With savory blinis, you can serve thinly sliced smoked fish, lumpfish roe, crumbled hard-boiled eggs, Roquefort or another strong-flavored cheese...
You can also serve the blinis as dessert with sweet toppings: jam, honey, candied fruits... In this case, add a tablespoon of sugar to the batter.
